The captcha for this guestbook uses an svg which makes it unusable for visitors who use tor browser and have set the security level at safest because the svg is blocked and thus invisible (in case you are wondering why > https://www.schneier.com/blog/archives/2025/08/trojans-embedded-in-svg-files.html). Для начинки: - Говядина (желательно часть с жиром) 300 г; - Свинина (шея или лопатка) 200 г; - Лук репчатый 2 средние луковицы (ок. 200 г); - Чеснок 1..2 зубчика; - Соль 1.5 ч.л.; - Чёрный перец молотый 0.5..1 ч.л.. Тесто: 1. В миске смешайте муку и соль. Сделайте углубление, влейте тёплую воду, яйцо и масло; 2. Замесите тесто 8..10 минут до гладкости (оно должно быть упругое, не липнуть); 3. Заверните в пищевую плёнку и оставьте 20..30 минут при комнатной температуре. Начинка: 1. Мясо и лук пропустите через мясорубку или очень мелко нарежьте. Добавьте пропущенный через пресс чеснок; 2. Добавьте соль, перец и 50..70 мл холодной воды или бульона - это сделает фарш сочным. Хорошо перемешайте (лучше руками), добиваясь однородной массы. Формовка пельменей: 1. Раскатайте тесто в жгут, разрежьте на части. Раскатайте каждую часть в тонкий пласт (ок. 1..1.5 мм); 2. Вырежьте кружки диаметром 6..7 см (стаканом, тарелкой); 3. На каждый кружок положите 1 ч. л. фарша, защипните края в классическую «мешочек» или полумесяц, плотно прижимая шов, чтобы при варке не раскрывались. Варка: 1. Доведите до кипения большую кастрюлю подсоленной воды; 2. Опускайте пельмени партиями, аккуратно помешивая, чтобы не прилипли; 3. После всплытия варите 4..6 минут; 4. Выньте шумовкой, дайте стечь. Подача: - Подавайте со сметаной, уксусом, горчицей или растопленным сливочным маслом; - Можно обжарить отварные пельмени на сковороде до золотистой корочки.
